Fridge Pickles

I don't can, except dilly beans (pickled green beans, so delicious) when we get inundated mid-summer from the farm. Should be any week now I guess.

But I do make refrigerator pickles. No bubbling, boiling water and finicky sterilizing needed. Well, the jar should be clean of course... I dare you NOT to make these. They're my kiddos favorite cucumber treat, trust me that's a lot of white sugar in this house!

Refrigerator Pickles

Ingredients:

  • 8 c thickly sliced cucumbers
  • 2 small onions, sliced
  • 2 tbsp pickling salt (I use less)
  • 2 c white vinegar
  • 1 c sugar (more or less depending on taste for sweet pickles)
  • 1 tsp mustard seed
  • 1 tsp celery seed

Directions:

  1. Combine cukes, onions, and salt in large bowl. Mix well.
  2. Combine vinegar, sugar, celery seed and mustard seed in saucepan.
  3. Cook over medium heat, stirring frequently until sugar is dissolved.
  4. Pack cukes & onion mixture fairly tightly into jars (to minimize floating in liquid as much as possible).
  5. While still hot, pour vinegar mixture over vegetables.
  6. Let cool to room temperature. Screw on lid and put in fridge.

Let pickles age 7-10 days in fridge for best flavor. Will keep for several months under refrigeration. Ha, like that ever happens! Picture shown is a half batch, fits in a quart Mason jar.

    Awesome! Will be trying these this weekend for sure. We ALL love pickles in this family and it never occured to me you could make them so easily. I remember my grandmother slaving over a hot stove and canning pickles. I am so excited about this version!! Thanks! a.

    These looks so pretty and delicious! I think I will forgo the sugar (since I'm Type 2 Diabetic) and just have the sour (dilly type) of pickles! Can't wait to try this recipe. Thanks for much for sharing, Renee! I'm new to your blog and really love what I've seen so far! Great job!

    Do you think that you could use honey or agave instead of sugar? Your pickles look beautiful and I think my hubby would love them!

      Shannon, that's a great question. This is an old post (4 years ago now) from the days when I actually kept white sugar in the house. I don't make these pickles anymore (smile). You could experiment, but I can't say how it will turn out. Nowadays we eat our cucs fresh in daily salads.

      I have not made this type of pickle but have made bread and butter pickles successfully with honey for many years.

    I wanted to try a half batch now but don't have any pickling salt!!! Dang it!!! Can I use some sea salt or kosher salt?
