Easy Sprouting & Happy Spring

Today is the first day of spring. The day was overcast & drab and the snow is still mounded 2 feet high over most of my gardens. Not surprisingly there is nothing green growing out of doors so in an attempt to post about something lovely, green and growing I've resorted to taking a photo of my sprouts.

Growing sprouts is super easy and economical. Our kids love them. I can only grow enough to provide a generous serving for our salads every couple of days but they are home grown crunch nonetheless.

My sprouting tips:
- I keep it really simple and have 3 quart jars going at once with 3 different sized screens (small, medium & large), using the larger screens as the sprouts grow.
- Mine screens are plastic and I purchased them at my local health food store.
- From start to finish a batch of organic alfalfa seeds takes about 4-5 days.
- 1 tbsp of seeds grows to about 1.5 cups of compacted sprouts for literally pennies.
(By the way, I don't usually keep them on the counter by the window but the dish drain, where I keep them, isn't so photogenic.)
